ingredients

  • 3 c flour
  • 2 c white sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 3 eggs, beaten
  • 1 tbsp vegetable oil
  • 1 1/8 c applesauce
  • 2 tsp vanilla extract
  • 8 oz can crushed pineapple, drained
  • 1/3 c chopped pecans or walnuts
  • 2 c diced bananas

directions

Preheat oven to 350. Grease and flour a large cookie sheet with sides, or an 11 x 17 inch jelly roll pan. Combine flour, sugar, baking powder, salt, and cinnamon in a large bowl. Add eggs, applesauce, and oil; stir until moistened. Do not beat. Stir in bananas, 2 teaspoons vanilla, pineapple, and pecans. Bake for 25-30 min, or until done. Cool on a wire rack.
