Zesty Sausage and Peppers with Penne
This hearty meal is great during the summer when you are inundated by peppers.
ingredients
- 2 medium onions, halved and sliced
- 3 cloves garlic, minced
- 10 oz. mushrooms, sliced,
- 3 TBsp balsamic vinegar
- 1 can diced tomatoes
- 6 plum tomatoes, seeded and diced
- 1 green pepper, sliced
- 1 red pepper, sliced
- 1 package boca veggie italian sausage, sliced into 1/2 inch rounds
- 3 TBsp italian seasoning
- 1 tsp red pepper flakes
- 1 lb penne pasta cooked and drained
- 3 TBsp olive oil
- black pepper to taste
- ramano cheese and chopped parsley for garnish

In large skillet, heat olive oil over medium high heat. Add onions, mushrooms and peppers and saute until onions turn slightly translucent. Lower heat to medium. Add garlic, red pepper flakes, italian seasoning and sausage. Cook for about 5 minutes. Add canned and fresh tomatoes and balsamic vinegar. Simmer 10-15 minutes. Add black pepper to taste.

Pour over penne and garnish with shaved ramano cheese and fresh chopped parsley.

Obviously, for those of you who insist, you can use real Italian sausage. I have also used shady brook farms hot turkey sausage. Just start with the sausage in the olive oil. When just about cooked through, add the rest of the ingredients.
