Moros y Cristianos - Moors and Christians
The dark-skinned Moors invaded Spain in the eighth century hence the name for black beans and rice. Traditional black beans and rice is served with the prepared beans on top of cooked rice. This dish is different because the rice and beans are cooked together.
ingredients
- 1/2 lb dried black beans (Approximately 2 1/2 cups canned)
- 1 large onion, diced
- 6 cachucha peppers, seeded and chopped
- (Substitute two medium bell peppers)
- 3 garlic cloves, crushed
- 3 teaspoons ground cumin
- 1 teaspoon oregano
- 1 bay leaf
- 3 Tablespoons mojo criollo sauce or 3 tablespoons vinegar
- Olive oil
- 4 cups chicken stock
- 3 tablespoons tomato paste
- 2 cups long-grain white rice
- 2 teaspoons salt
- Pepper to taste
