Cherry Almond Swirl Coffee Cake

A recipe given to Amber by a good friend. This is a very yummy dessert but is very sweet and very rich.

ingredients

Coffee Cake
  • 1 1/2 Cups Sugar
  • 1/2 Cup butter, softened
  • 1/2 cup shortening
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 4 eggs
  • 3 cups flour
Cream Cheese Filling
  • 1 8 oz. package cream cheese, softened
  • 1/3 cup sugar
  • 1 teaspoon almond extract
  • 3 tablespoons flour
  • 1 egg yolk
Cherry Filling
  • 1 21 oz. can of cherry pie filling
  • 1 teaspoon of lemon juice
Glaze
  • 1 cup powdered sugar
  • 1-2 tablespoons milk

directions

Preheat oven to 350 degrees. Grease a 9 x 14 or 10 x 13 pan. Beat sugar, butter, shortening, baking powder, vanilla, almond extract and eggs in large bowl with electric mixer on low speed, scraping bowl often. Beat on high speed 3 minutes, scraping bowl occasionally. Stir in flour. Spread 2/3 of batter in pan. Mix all cream cheese filling ingredients until smooth. Drop by spoonfuls on batter in pan. Drop cherry filling by spoonfuls between spoonfuls of cream cheese filling*. Drop remaining batter by tablespoonfuls on top. Bake about 45 minutes. Remove from oven. Drizzle Powdered Sugar Glaze over warm coffee cake. Serve warm or let cool. Cut into squares.

*You may spread the cream cheese filling over the dough and then carefully spread the pie filling over the cream cheese but we like it in spoonfuls. You may also add another 1/2 recipe of cream cheese filling if you like it really gooey.
