Chicken Chili Verde

This chili is very easy to make and has a nice mexican flair. Top it with sour cream, cheese, and a crushed tortilla chips.

ingredients

  • 1 1/2 quart chicken broth
  • 1 can (8 oz) diced fire roasted green chiles
  • 1 can (8 oz) medium green salsa
  • 1 bunch of cilantro, chopped
  • 1 pound of white beans (soaked over night and drained)
  • 1 diced yellow bell pepper
  • 1 diced sweet onion
  • 4 boneless skinless chicken breasts
  • 2 tablespoons cumin
  • 1 tablespoon salt
  • 1/4 cup lime juice
  • 1 tablespoon oregano

directions

In a large crockpot, combine all the ingredients and set to cook for 4 hours on high. Once cooked, shred the chicken breasts.
