Banana Oatmeal Cranberry Bread
ingredients
- 1 1/4 cup butter
- 2 cups sugar
- 4 eggs
- 1/4 teaspoon salt
- 2 teaspoon soda
- 3 cups flour
- 1 cup uncooked rolled oats
- 6 very ripe large bananas
- 1/2 cup walnuts pieces
- 1/2 cup pecan pieces
- 1 cup cranberrys, dried
- 1 teaspoon vanilla

1 mixer. Handheld is ok but I use a Stand mixer.

2 bread pans (metal) thoroughly greased (I use sweet butter for this)

1. Preheat oven to 325F degrees. Melt butter, let cool slightly.

2. Cream together butter sugar and bananas. Add eggs one at a time to fully incorporate into mixure. Add vanilla.

3. Add flour, salt, and soda to bowel. I always add salt and soda to the flour before putting in the mixer bowel. Add oats

4. Stir in nuts and cranberries until fully incorporated. (most stand mixers have a stirring paddle that works great for this)

Pour into pans, bake for 1 hour 25minutes or until cake tester inserted into middle comes out clean.

Icing:

1 cup confectioner’s sugar

1/2 stick margarine

1/4 teaspoon vanilla

1/2 banana, creamed (optional)

cream all ingredints together until smooth.

If you do not want the oatmeal (it does add texture to the bread) you can use 4 cups of flour instead of 3.

Cranberries can be totally omited. I have made this with raisins and it was well liked. (i hate raisins with a passion so only relying off word of mouth)

You can omit nuts. Have made it without nuts before and its still ok. IMO, its bland without but some people can’t eat them.

Your oven should have a pretty steady temp. Cooking this bread at a higher temp will make for some burnt loaves. Make sure to have an internal temperature gauge if you know your oven won’t keep a steady temperature.
