Mediterranean Potato Salad
ingredients
- 1 1/2 lbs red potatoes, boiled and cooled and cut into 2-inch chunks
- 3/4 cup red onion, thinly sliced julienne
- 1 lb Beefsteak tomatoes, cut into salad wedges
- 1/4 lb cucumber, peeled and cut into 1/2 inch thick slices
- 1/4 lb whole pitted kalamata olives (about 11.5 ounce jar), stems may be removed
- 1/4 lb feta cheese, crumbled
- 1 small green bell pepper, thinly sliced
- 1 cup of the Greek Dressing
- Dressing:
- 2 cups olive oil
- 1 cup red wine vinegar
- 1/4 cup chopped garlic, or less to taste
- Kosher salt to taste
- Coarse black pepper to taste
- 1 tbs dried oregano
- 1/2 lb crumbled feta cheese

In large bowl, mix salad ingredients together. Toss with dressing. Cover and chill overnight.

In bowl whisk together all ingredients. Remaining dressing can be reserved for another salad.
