Silky Pork Adobo
A simple yet intoxicating dish - pork, soy sauce, vinegar and spices. Tantalizing and great over rice.
ingredients
- 1 to 1 1/2 lbs of pork shoulder, country style pork without bones etc.
- 1/4 cup minced garlic
- 2 bay leaves
- 1/2 cup soy sauce
- 1/3 cup vinegar [white vinegar, balsamic - any vinegar]
- Lots of water to boil the pork
directions

Cut pork into 1 to 1 1/2 inch cubes.

Put in large casserole and cover with water.

Boil the pork until tender.

Add soy sauce. You might need to add more to taste. Add bay leaf and garlic.

Keep cooking the pork until it is so tender that you can shred with fork.

Then, slowly add vinegar.

Add more or less vinegar to the pork based on your preferences.

It tastes fabulous when most of the water is almost gone and you are left with just a savory sauce.

Serve over cooked rice.

This dish can last for several days and always taste great the next day.
