Mexican Pie
Sue Miller, (Good friend and Maid of Honor in our wedding) gave me this recipe back in the early 80’s. It is still a hit in our house today.
1 Pkg. Corn Tortillas
1 Lb. Hamburger (Cooked w/ 1 pkg taco seasoning)
1 (2 cup) Package of shredded cheddar cheese
1 can of tomato sauce with green chili’s (Rotel is good)
1 15 oz. can of regular tomato sauce
Spices to taste: Cumin, red pepper, hot sauce, salt and pepper.
Mix the 2 sauces in bowl and add spices. Layer in Baking pan- tortillas, sauce, burger, cheese, ending with tortillas, cheese and sauce on top. Bake at 350° for 30 minutes or until heated through.
