Texas Breakfast Burritos
ingredients
- 1 potato, peeled and diced
- 1/2 Cup onions, chopped
- 1 Cup Egg Beaters or 2 slightly beaten eggs
- OPTIONAL:
- salsa
- Bacon Bits
- shredded cheese

Boil the potato until tender.

Saute onion in skillet. Add potato and stir.

Add eggs to skillet. Stir eggs while cooking with potato.

Fill warmed tortilla with egg and potato mixture.

Add salsa, Bacon Bits, and cheese to taste. Roll up.

TIP: Heat tortillas by placing each one on top of skillet mixture for a minute; while you’re filling that one, heat the next one.
