Cranberry Cake
My friend, Sue Rodgers makes this pretty cake at Christmas and it would be nice at Thanksgiving, too.
ingredients
- 2 eggs
- 1 1/2 c. sugar
- 2 1/4 c. self rising flour
- 3/4 c. oil
- 3/4 c. buttermilk
- 1 c. chopped pecans
- 1 c. whole fresh or frozen cranberries
directions
Cream oil and sugar. Add eggs. Add flour and milk alternately. Stir in nuts and berries. Bake in greased tube or bundt pan at 350° for 50-60 minutes. Cool on wire rack. Freezes well.
