Mexican Dip
ingredients
- 1 lb ground beef
- 1 can of kidney beans rinsed and drained
- Salt, pepper, and chili powder
- 1 8oz container of sour cream
- 3 scallions (green onions) chopped
- 1 chopped tomato (optional)
- 8oz package of shredded cheddar cheese
- 1 bag of tortilla chips
directions
In a skillet, brown ground beef. Drain fat. Season to taste with salt, pepper, and chili powder. Add drained kidney beans. Spread meat mixture in a 9” square pan. Spread sour cream over meat mixture. Sprinkle with chopped green scallions, chopped tomato, and grated cheddar cheese. Bake at 350° for 15 to 20 minutes. Serve with tortilla chips.
