Mary's Carmel Popcorn
I loved it when Mom made this! I could eat bags and bags of this! Good thing she only made it for Christmas! Good to give to your teachers!
ingredients
- 5 quarts popped popping corn
- 2 cups brown sugar
- 1 cup butter
- 1/2 cup white Karo syrup
- 1 tsp. Salt
- 1/2 tsp. Soda
- Pecans or Almonds (optional to taste)

Put popped corn into an aluminum foil turkey roaster

or similar large pan.

Put in the oven to keep warm at 250 degrees.

In a sauce pan combine sugar, syrup, butter and salt.

Bring to a boil over medium heat stirring to blend.

When at a full rolling boil stirring constantly, bring to 248 degrees, or let boil for 5 minutes.

Remove from heat and stir in soda.

Pour caramel over hot popcorn, and stir well.

Bake in oven at 250 degrees for 1 hour, stirring very 15 minutes. Pour out onto waxed paper to cool.

Break apart and store in zip lock bags.
