Mary's Carmel Popcorn

I loved it when Mom made this! I could eat bags and bags of this! Good thing she only made it for Christmas! Good to give to your teachers!

  • 5 quarts popped popping corn

  • 2 cups brown sugar

  • 1 cup butter

  • ½ cup white Karo syrup

  • 1 tsp. Salt

  • ½ tsp. Soda

  • Pecans or Almonds (optional to taste)

  • Put popped corn into an aluminum foil turkey roaster

  • or similar large pan.

  • Put in the oven to keep warm at 250 degrees.

  • In a sauce pan combine sugar, syrup, butter and salt.

  • Bring to a boil over medium heat stirring to blend.

  • When at a full rolling boil stirring constantly, bring to 248 degrees, or let boil for 5 minutes.

  • Remove from heat and stir in soda.

  • Pour caramel over hot popcorn, and stir well.

  • Bake in oven at 250 degrees for 1 hour, stirring very 15 minutes. Pour out onto waxed paper to cool.

  • Break apart and store in zip lock bags.
