Chicken and Corn Burritos
These are great during the summer when fresh corn is in season. It’s a simple burrito with lots of flavor.
4 lbs chicken
½ cup vegetable oil
½ cup lime juice
½ cup chopped onions
3 cloves garlic
1 tsp red pepper
2tsp hot sauce
1 tsp paprika
1 tsp cumin
2 tsp salt
flour tortillas
2-3 fresh ears of corn grilled, removed from cob and mixed with butter, cayenne pepper, and a dash of garlic salt
garnish with Monterrey jack cheese and sour cream
Mix together all ingredients except chicken, tortillas, corn, and garnish. Pour mixture over chicken and marinade overnight. Grill chicken over medium high heat until no longer pink. Slice chicken into small pieces. Serve chicken in tortilla topped with corn, cheese and sour cream
