From “Vegan Cupcakes Take Over the World”

ingredients

  • 1 C soy milk
  • 1 t apple cider vinegar
  • 1.25 C flour
  • 2 T cornstarch
  • 3/4 t baking powder
  • 1/2 t baking soda
  • 1/4 t salt
  • 1/2 C margarine
  • 3/4 C sugar
  • 2.25 t vanilla extract

    Heat oven to 350 degrees.

    Whisk together soy milk and vinegar and set aside to curdle.

    Mix all other ingredients together.

  • 4

    Add curdled soy milk.

  • 5

    Fill cup cakes in lined pan.

  • 6

    Bake for 20 minutes.

  • 7

    Frost or not, these are delicious!
