ingredients

Salad Ingredients:
  • 1-2 lbs green beans
  • 2 hard boiled eggs
  • 2 Tablespoons finely chopped red onion
  • 1 Tablespoon Fresh Parsley or Chives, finely chopped (optional)
Dressing:
  • 1/2 Cup olive oil
  • 1/2 cup vinegar (red wine or other)
  • 1 Tbs. Tarragon
  • 1 Tbs. Basil
  • 2 Tbs Mayonnaise
  • Salt to taste
  • Fresh Ground Pepper to taste

directions

Steam green beans to desired consistency. Refrigerate until cold. Assemble beans, topped with onions, egg, and parsley or chives. Combine all ingredients for dressing, then mix well and pour on top of salad.

notes

Use whatever herbs you want for the vinaigrette.
