Chicken Salad with Mandarin Oranges & Pineapple
ingredients
- 2 1/2 to 3 cups diced cooked chicken
- 1 cup sliced celery
- 2 Tbs. each chopped green onions and capers
- 1 tsp salt
- 2 Tbs. lemon juice
- 1 can (11-oz.) mandarin oranges, drained
- 1 can (about 9-oz.) pineapple chunks, drained
- 1/2 cup slivered almonds (toasted)
- 1/2 cup mayonnaise
- 1/2 tsp. grated lemon peel
directions
Combine cooked chicken with celery, green onions and capers. Mix in the salt and lemon juice. Cover and chill for several hours. Just before serving add the oranges, pineapple, and almonds. Combine mayonnaise and lemon peel; mix in carefully so as not to break up fruit. Spoon into a bowl lined with greens.
