Favorite White Birthday Cake with Pineapple Filling
This was served for Charlie’s birthday dinner many times. We all enjoyed this festive cake.
ingredients
- 2 eggs separated
- 1 1/2 cups sugar
- 2 1/4 cups sifted cake flour
- 3 tsp. baking powder
- 1 tsp salt
- 1/3 cup vegetable oil
- 1 cup whole milk
- 1 1/2 tsp. vanilla
- 7-Minute Frosting:
- 1 egg white unbeaten
- 2/3 cups sugar
- 2 Tbsp. cold water
- 1/4 tsp. cream of tartar
- 1 tsp. vanilla
- dash salt
- Pineapple Filling:
- 2 Tbsp. cornstarch
- 2/3 cup sugar
- 2 cups crush pineapple(juice & fruit)
- 1 Tbsp. lemon juice

Sift only 1 cup sugar, cake flour, baking powder and salt.

Heat oven to 350 degrees and grease and flour 2 cake pans.

Separate 2 eggs. Put yolks in small bowl until ready to use. Put whites in medium mixing bowl. Beat whites until frothy; then gradually beat in 1/2 cup sugar. Beat until stiff and glossy - set aside.

In large mixing bowl add above sifted dry ingredients, salad oil, only 1/2 cup milk, and vanilla. Beat 1 minute on medium speed of mixer. Then add add the other 1/2 cup of milk and 2 egg yolks. Beat 1 minute. Fold in egg whites. Pour batter into prepared cake pans and cook 30-35 minutes.

Cool cakes thoroughly. Slide a thin knife around cake to detach from the pans. Invert cakes.

Filling:

Mix cornstarch and sugar; then add pineapple and lemon juice.Cook slowly all ingredients until thick and clear. Cool and spoon onto cake.

Combine all ingredients in double boiler. Stir until sugar dissolves. Beat until stiff enough to hold peaks. Add 1 tsp vanilla. Frost cake and decorate as desired.
