Split Pea Soup

ingredients

  • 2 cups green split peas
  • 2 quarts water
  • 1 lb. meaty ham bone
  • 1 bay leaf
  • 10 peppercorns
  • 2 carrots, diced
  • 1/2 cup chopped onion
  • 2 cups celery chopped with leaves
  • 3 hot dogs (optional)
  • 2 cups beef consume – thicker than broth
  • 1 cup milk
  • Salt to taste

directions

Place split peas in water to soak overnight. Using water in which they were soaked, bring to a boil. Simmer covered for 1 hr along with ham, bay leaf, and peppercorns. Sometimes add more water for ham. After an hour, add carrots, onion, celery, and simmer for 1 hr. Remove ham. Puree soup by putting it through a coarse sieve. Cut the meat from the bone and discard bone. Slice hot dogs. Add ham, consume, hot dogs, milk to soup. Reheat.
