Honey Poppy Seed Cake
The woman who enjoys treating her family to a new food idea occasionally will gloat over this recipe for honey poppy seed cake. It comes from an Illinois woman who has tested many recipes using honey for the Illinois Beekeepers’ association. It’s a good one.
ingredients
- 3/4 cup milk
- 1/2 cup poppy seed
- 2 cups all-purpose flour, sifted
- 1 1/2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/2 cup butter
- 1/2 cup light honey
- 1 cup sugar
- 4 egg whites, beaten stiff
- 1 1/2 cups milk
- 1 tablespoon cornstarch
- 1/4 cup light honey
- 4 egg yolks
- Pinch of salt
directions
Pour milk over poppy seed and let stand three hours. Sift flour with baking powder and salt four times. Cream butter. Add honey and continue creaming. Add sugar and continue creaming. Add milk and poppy seed, mixing well. Add sifted dry ingredients. Fold in beaten egg whites. Bake in two layers in a moderate (350°F) oven until done, about 30 minutes. Spread honey filling between layers and serve with whipped cream.

Cook filling ingredients in double boiler, stirring constantly until thick enough to spread. A half cup of nut meats may be added at the end of the cooking period if desired.
