Carrot Raisin Bran Muffins
Sweet and healthy, our fav!
ingredients
- 8 oz. can crushed pineapple
- 1 cup raisins
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 3 cups carrots, shredded
- 3/4 cup brown sugar
- 1 tsp. vanilla
- 1/2 cup Splenda or white sugar
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 5 cups bran flakes (then crush)
- 1 tsp. salt
- 2 tsp. baking soda
- 1 tsp. baking powder
- 5 eggs

Mix wet ingredients, then stir in dry ingredients. Refridgerate 1 hour only to allow bran flakes to moisten.

Mix well again.

Fill muffin pan with foil tins and grease with nonstick spray.

Spoon muffin mix 3/4 full into each tin.

Bake at 350F about 20 minutes or until done.
