California Crab Wraps
1½ cp. diced plum tomatoes (about 3)
½ cp. prechopped red onion
½ cp. diced avocado (about ½ avocado)
1 tb. fresh lime juice
½ tsp. ground cumin
¼ tsp. salt
⅛ tsp. black pepper
1¼ cp. lump crabmeat
½ cp. (4oz.) cream cheese
¼ cp. chopped fresh cilantro
4 10inch flour tortillas
4 romaine lettuce leaves, trimmed
Combine first seven ingredients in a small bowl; set aside. Combine crabmeat, cream cheese, and cilantro in a small bowl; spread evenly down center of each tortilla. Place one lettuce leaf over crabmeat mixture. Spoon tomato mixture evenly over lettuce and roll up.
