California Crab Wraps
ingredients
- 1 1/2 cp. diced plum tomatoes (about 3)
- 1/2 cp. prechopped red onion
- 1/2 cp. diced avocado (about 1/2 avocado)
- 1 tb. fresh lime juice
- 1/2 tsp. ground cumin
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1 1/4 cp. lump crabmeat
- 1/2 cp. (4oz.) cream cheese
- 1/4 cp. chopped fresh cilantro
- 4 10inch flour tortillas
- 4 romaine lettuce leaves, trimmed
directions
Combine first seven ingredients in a small bowl; set aside. Combine crabmeat, cream cheese, and cilantro in a small bowl; spread evenly down center of each tortilla. Place one lettuce leaf over crabmeat mixture. Spoon tomato mixture evenly over lettuce and roll up.
