Chocolate-Orange Butter Cookies with Chocolate-Brandy Glaze

Baked cookies can be stored in an airtight container at room temperature for up to three days but should be glazed the day they are served.

ingredients

  • 20 tablespoons unsalted butter (2 1/2 sticks), softened to cool room temperature (about 65 degrees)
  • 1/2 cup cocoa powder (about 2 ounces)
  • 1 teaspoon espresso powder
  • 1 cup sugar (7 ounces)
  • 2 teaspoons grated orange zest (from 1 orange)
  • 1/4 teaspoon table salt
  • 2 large egg yolks
  • 1 teaspoon brandy
  • 2 1/4 cups unbleached all-purpose flour (11 1/4 ounces)
  • Glaze
  • 4 ounces bittersweet chocolate
  • 4 tablespoons unsalted butter
  • 2 tablespoons corn syrup
  • 1 teaspoon brandy
