Mexican Lasagna
A simple, cheesy way to go Mexican without too much spice.
ingredients
- 2 10 oz cans of enchilada sauce
- 1 15 oz can of tomato sauce
- 4 large chicken breasts, poached and chopped
- 1 package fajita-sized flour tortillas
- 1 8 oz package of shredded mozzarella
- 1 8 oz package of shredded Monterey jack
directions

Spray 9x13 inch baking pan with cooking spray. Preheat oven to 350°F.

Mix chicken with enchilada sauce and tomato sauce. Put some chicken mixture into the bottom of the pan. Layer as follows: tortillas, chicken mixture, cheeses, tortillas, chicken mixture, and top with cheeses.

Bake at 350°F for 30-45 minutes,
