Poached Salmon with Cucumber Sauce
ingredients
Salmon:- 6 fresh salmon steaks
- 1 qt. water
- 1 1/2 Tbs. salt
- 2 Tbs. lemon juice
- 1 bay leaf
- 1 lemon, quartered
- 2 tomatoes, quartered
- 1 unpeeled cucumber
- 1/2 c. sour cream
- 1/4 c. mayonnaise
- 1 Tbs. minced parsley
- 2 tsp. grated onion
- 2 tsp. cider vinegar
- 1/4 tsp. salt
- Pinch of black pepper
directions
In a large skillet heat the water, salt, lemon juice and bay leaf to boiling. Simmer 3 of the steaks at a time for 10 minutes. remove with a large slotted spoon or a spatula. Chill the steaks well.

FOR SAUCE:

Grate enough cucumber to make 1 cup. Do not drain. Add the remaining ingredients and stir well. Chill. At serving time, arrange the salmon on a platter or board. Garnish.
