Haricots Vert & Potato Salad

This was our first course at Ad Hoc in Yountville. It set the bar very high for the rest of the meal. They used Iberico Ham, which is only produced in Spain, and costs about $40/100g. When we made the salad home, we used thinly shaved proscuito, and it was delicious. Not quite as succulent as the Iberico.....but still very good. Lys roasted our walnuts in a bit of Honey to give a touch of sweetness that is awesome with the saltiness of the meat. Do it.

  • -Blanched Green Beans, chilled

  • -Sliced new potatoes, boiled until Al Dente

  • -THINLY sliced Radishes....see though

  • -Toasted Walnuts

  • -Shaved Prosciutto

  • -Sherry Vinagrette

  • Mix all the ingredients and make a salad. Serve it.
