Pasole
There are an infinite number of ways to create this New Mexico classic.
ingredients
- 2 lbs meat (chicken, pork, or beef)
- 1 package Pasole mix and seasoning
- 3 quarts water
- 1 can diced, fire roasted tomatoes
- 1/2 cup diced onion
- 2 cloves chopped garlic
- 2 tsp oregano
- 1 tsp salt
- 1/2 tsp pepper
- Tortillas
- Shredded cheese

Combine meat, Pasole mix and seasoning, water, tomatoes, onion, garlic, oregano, salt and pepper in crock pot.

Cook on medium-high heat for 3 hours, or until meat is done.

Spoon Pasole mixture onto tortillas and top with cheese.
