Butterscotch Cookies

ingredients
- 1/2 C softened unsalted butter
- 2 C firmly packed brown sugar
- 2 eggs
- 1 tsp vanilla
- 3 C unsifted flour
- 1 1/2 tsp cream of tartar
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- Nuts, if desired.

Cream together butter, sugar, eggs and vanilla.

Mix together flour, cream or tartar, baking soda and salt.

Add flour mixture to butter mixture and beat well. Add nuts if desired. Batter will be stiff.

Form into rolls, wrap and refrigerate overnight.

Slice and bake on ungreased cooked sheet. Let cool for 1 minute before removing to rack.
