Summer Harvest Pasta Salad
ingredients
- Dressing:
- 2 ounces of chanterelle mushrooms
- 2 tsp chopped shallots
- 2 tsp olive oil
- 1 Tb fresh chopped basil
- 1/2 tsp Dijon mustard
- 1.5 Tb wine vinegar
- 1 Tb balsamic vinigar
- 1/2 cup walnut oil
- pinch salt
- pepper to liking
- Pasta Salad:
- 1/2 lb dried fusilli pasta
- 1/4 medium red pepper, roasted
- 1/4 medium yellow pepper, roasted
- 1/4 lb cherry tomatoes, no stems
- 1/4 lb snow peas in one inch slices
- 1/4 cup pitted black olives, finely chopped
- 1 head Boston lettuce
