  • Dressing:
  • 2 ounces of chanterelle mushrooms
  • 2 tsp chopped shallots
  • 2 tsp olive oil
  • 1 Tb fresh chopped basil
  • 1/2 tsp Dijon mustard
  • 1.5 Tb wine vinegar
  • 1 Tb balsamic vinigar
  • 1/2 cup walnut oil
  • pinch salt
  • pepper to liking
  • Pasta Salad:
  • 1/2 lb dried fusilli pasta
  • 1/4 medium red pepper, roasted
  • 1/4 medium yellow pepper, roasted
  • 1/4 lb cherry tomatoes, no stems
  • 1/4 lb snow peas in one inch slices
  • 1/4 cup pitted black olives, finely chopped
  • 1 head Boston lettuce
