Brunch Enchiladas
ingredients
- 2 cups fully cooked bacon or sausage
- 1/2 cup chopped green onions
- 1 chopped green, red, or yellow pepper
- 1 chopped tomato, large
- Flour tortillas (6-8 inches)
- 2 cups shredded cheddar cheese
- 1 Tbsp. all-purpose flour
- 2 cups half-n-half or milk
- 6 eggs, beaten
- 1/4 tsp. salt (optional)

Combine bacon/sausage, onions, pepper, and tomato. Place about 1/3 cup down center of each tortilla. Top each with 2 Tbsp. cheese. Roll up and place seam side down in a greased 9 X 13 pan.

In a bowl, combine flour, milk, eggs, and salt until smooth. Pour over tortillas. Cover and refrigerate 8 hours or overnight.

Remove from refrigerator 30 minutes before baking.

Cover and bake at 350° for 25 minutes. Uncover; bake for 10 more minutes. Sprinkle with remaining cheese; bake 3 minutes longer or until cheese is melted.

Let stand 10 minutes before serving.
