Tex Mex Potato Skins
ingredients
- 6 baked potatoes, hollowed out skins
- 1 lb lean ground beef (or turkey)
- 1 cup onion, chopped
- 1 (16 oz) red kidney beans
- 1 (16 oz) picante sauce
- 1 T chili powder
- 1 t minced garlic
- cheddar cheese, grated
- sour cream

Put already baked skins in 400 degree oven on a cookie sheet.

Cook meat and onion. Drain.

Rinse beans. Add picante sauce, beans, and seasonings to the meat mixture. Cook 3-5 minutes.

Stuff hot potatoes with meat and sprinkle with cheddar cheese. Heat in oven until cheese is melted.

Top with sour cream before serving.
