Pineapple Upside Down Cake

ingredients
- 1/4 C butter
- 1 C brown sugar
- 1 can crushed pineapple (15 oz), drained. **Save juice for cake.
- 3 eggs
- 1 C sugar
- 1 C flour
- 1 tsp baking powder
- 5 T pineapple juice.

Preheat oven to 400 degrees.

**Use 10" cast iron skillet if possible.

Melt butter in skillet then add 1 C brown sugar. Spread pineapple over this.

Mix together eggs, sugar, flour, baking powder and pineapple juice. Pour mixture over pineapple.

Bake for 30-35 minutes. **Let cake stank for 15 minutes before turning out onto cake plate.
