Frozen Waldorf Salad
Tasty winter version of a classic....nice addition to many meals.
ingredients
- 2 slightly beaten eggs
- 1/2 cup sugar
- 1/2 cup pineapple juice
- 1/2 cup walnuts
- 1/4 cup lemon juice
- 1/8 teas. salt
- 1/2 cup crushed pineapple
- 2 diced apples
- 1 cup diced celery
- 1 cup whipping cream, whipped
directions
Combine sugar, eggs, pineapple juice, lemon juice and salt. Cook on low heat until thickened, stirring constantly. Cool. Add celery, nuts, crushed pineapple, apple and nuts. Gently fold in whipped cream. Freeze. Take out of freezer four hours before serving and place in refrigerator to soften.
