Date Nut Bread

ingredients
- 2 C boiling water
- 1 pkg. pitted chopped dates
- 2 tsp baking soda
- 2 C sugar
- 2 eggs
- 2 T melted butter
- 1 tsp sale
- 4 C flour
- Need: 5 greased vegetable cans
- 2 tsp vanilla
- 1 C chopped pecans or walnuts

Preheat oven to 350°

Sprinkle baking soda over dates. Pour boiling water over the dates and baking soda. Let stand until cool.

Blend sugar and melted butter. Mix together eggs, flour, salt, vanilla and chopped nuts.

Add date mixture and sugar mixture to flour mixture. Blend well.

Pour into the 5 greased vegetable cans. Stand cans up on cookie sheet or jelly roll pan to bake. Bake for 1 hour or until cake tester comes out clean.

After cook, remove from cans and wrap tightly in Saran wrap, then aluminum foil.
