Date Nut Bread

  • Preheat oven to 350°

  • Sprinkle baking soda over dates. Pour boiling water over the dates and baking soda. Let stand until cool.

  • Blend sugar and melted butter. Mix together eggs, flour, salt, vanilla and chopped nuts.

  • Add date mixture and sugar mixture to flour mixture. Blend well.

  • Pour into the 5 greased vegetable cans. Stand cans up on cookie sheet or jelly roll pan to bake. Bake for 1 hour or until cake tester comes out clean.

  • After cook, remove from cans and wrap tightly in Saran wrap, then aluminum foil.
