Ropa Vieja
A Core Recipe
ingredients
- 1 Large Onion, sliced into rings
- 1 Large Green Bell Pepper, thinly sliced
- 2 Celery Stalks, thinly sliced
- 2 Garlic Cloves, minced
- 1/4 Cup Red Wine Vinegar
- 2 Tbsp. Worcestershire Sauce
- 1 1/2 Tbsp. Ground Cumin
- 1/2 tsp. Salt
- 1/2 tsp. Pepper
- 9 Dashes Hot Pepper Sauce
- 1 (2 lb.) Flank Steak or Top Round
- 1 Cup Broth
- 3 Bay Leaves
- 1/2 Cup Fresh Cilantro, chopped

Combine onion through pepper sauce in a large bowl. Transfer half of the mixture into a 5 or 6 quart Crockpot. Place steak on top. Spoon remaining mixture over steak. Pour broth around steak and then tuck in bay leaves. Cover and cook until steak is tender, 5-6 hours on high or 8-10 hours on low.

Transfer the steak to a cutting board and shred with two forks. Return steak to Crockpot and stir in cilantro. Discard bay leaves.

This is great served fajita-style in tortillas!
