Ropa Vieja

A Core Recipe

  • 1 Large Onion, sliced into rings

  • 1 Large Green Bell Pepper, thinly sliced

  • 2 Celery Stalks, thinly sliced

  • 2 Garlic Cloves, minced

  • ¼ Cup Red Wine Vinegar

  • 2 Tbsp. Worcestershire Sauce

  • 1½ Tbsp. Ground Cumin

  • ½ tsp. Salt

  • ½ tsp. Pepper

  • 9 Dashes Hot Pepper Sauce

  • 1 (2 lb.) Flank Steak or Top Round

  • 1 Cup Broth

  • 3 Bay Leaves

  • ½ Cup Fresh Cilantro, chopped

  • Combine onion through pepper sauce in a large bowl. Transfer half of the mixture into a 5 or 6 quart Crockpot. Place steak on top. Spoon remaining mixture over steak. Pour broth around steak and then tuck in bay leaves. Cover and cook until steak is tender, 5-6 hours on high or 8-10 hours on low.

  • Transfer the steak to a cutting board and shred with two forks. Return steak to Crockpot and stir in cilantro. Discard bay leaves.
