Mango shrimp kebabs

Simple summer BBQ dish

  • Large fresh uncooked and unpeeled shrimp (make sure they are deveined though)

  • 1 mango

  • Goya mango nectar

  • Chilli powder

  • 1 lime

  • Peel mango and cut into squares

  • Place in bowl with shrimp and cover with mango nectar

  • Add about 2 teaspoons of good chilli powder (more if you like a bigger kick)

  • Add the jusice of one lime

  • Marinate for about 30 minutes mixing occasionally

  • Thread shrimp and mango onto skewers alternating shrimp with fruit

  • Place on grill and grill until shrimp are pink and cooked through - turn skewer at least once during cooking

  • Serve with green avocado salad
