Maque Choux
“Is this hand-shucked corn, Fay?” *
ingredients
- 4 slices bacon, diced
- 3/4 cup red bell pepper, diced
- 1/2 cup yellow onion, diced
- 1/4 cup dry sherry
- 4 cups fresh corn
- 1 1/2 cups heavy cream
- 1 tsp. Tabasco sauce
- salt and pepper to taste1/2 cup scallions, thinly sliced

1. Saute bacon over medium heat until crisp. discard all but 2 TBSP. fat. Add red bell pepper and onion to pan. Cook and stir until soft, about 5 minutes.

2. Add sherry and deglaze by stirring and scraping all the brown bits stuck to the bottom of pan. Continue cooking until sherry is nearly evaporated.

3. Add corn, cream and Tabasco. Bring to a simmer and cook until cream is thick enough to leave a trail when spoon is pulled through it.

4. Salt and pepper to taste. Remove from heat and stir in scallions.

This is rich, but a delicious way to serve corn. Serve with a simple, lean entree. Can be made a day ahead and reheat. NOTE: Can sub basil, sliced into thin strips, for the scallions.
