Maque Choux

“Is this hand-shucked corn, Fay?” *

  • 1. Saute bacon over medium heat until crisp. discard all but 2 TBSP. fat. Add red bell pepper and onion to pan. Cook and stir until soft, about 5 minutes.

  • 2. Add sherry and deglaze by stirring and scraping all the brown bits stuck to the bottom of pan. Continue cooking until sherry is nearly evaporated.

  • 3. Add corn, cream and Tabasco. Bring to a simmer and cook until cream is thick enough to leave a trail when spoon is pulled through it.

  • 4. Salt and pepper to taste. Remove from heat and stir in scallions.

This is rich, but a delicious way to serve corn. Serve with a simple, lean entree. Can be made a day ahead and reheat. NOTE: Can sub basil, sliced into thin strips, for the scallions.
