Cornbread
Azuca’s yummy cornbread recipe!
ingredients
- 1 stick of butter (8oz)
- 10 oz. sugar
- 4 eggs
- 6.5 oz. all purpose flour sifted
- 7 oz. cornmeal
- Pinch of salt
- .5 oz baking powder
- 10 oz. sour cream
- 10 oz. frozen corn kernels roasted
- 8 oz. red bell pepper roasted and diced
- Pam cooking spray

Preheat oven 350 degrees.

Cream the butter and sugar for few minutes (with mixer). Add eggs gradually.

Add flour, corn meal, baking powder, and salt. Mix for 2 minutes until mixed thoroughly.

Add sour cream and mix for another 2 minutes on low speed.

Add roasted corn kernels and roasted diced peppers.

Pour into pan(s). Bake for 40 minutes or until toothpick comes out clean.
