Sweet Potatoe Cake
I found this recipe in one of Mom’s cookbooks. It was from a neighbor, Betty M from the Ridge.
ingredients
Cake Batter- 2 cups flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/4 tsp baking soda
- 3 large eggs, separated
- 15 oz can sweet potatoes, drained
- 1 cup brown sugar, packed
- 1/2 cup butter, softened
- 1/2 cup buttermilk
- 1/2 cup raisins
- 8oz pkg cream cheese, soft
- 1/2 cup butter
- 3 1/2 cups powdered sugar
- 1 tsp vanilla
- 1 Tbs orange peel
- Mix together until creamy.

Heat oven to 350°. Grease & flour 2 cake pans.

In medium size bowl combine first 5 ingredients. In large bowl beat egg yolks & sweet potatoes until smooth; add brown sugar & butter. Beat until fluffy. On low speed add flour & buttermilk just until smooth.

Beat egg whites until soft peaks form and fold into cake batter. Add raisins.

Bake 30 to 35 minutes. Cool and frost with Cream Cheese Frosting.
