Hilda's Ravioli Dough and Filling
This is an authentic Pilla Family tradition. This recipe came from Italy. My mom’s mother, “Mum”, used to make these with a antique ravioli rolling pin which I still have. I can’t get the hang of the rolling pin and make them by hand.
ingredients
- Dough:
- 4 cups flour
- 2 eggs
- 1 Tablespoon oil
- 1 teaspoon salt
- 1 cup luke warm water
- Form to Dough, Roll thin. Cut with Round cutter.
- Filling:
- 1 large container of Ricotta cheese
- 3 eggs
- Fresh chopped parsley
- 1 cup or more grated Romano Cheese
directions
Mix Fillling. Fill circles. Either place another circle on top and seal with fingers or fork, or fold in half and seal with fingers or fork. Place layer on cookie sheet and freeze. Place in plastic bags and freeze to store.
