Sausage & Wild Rice Casserole

Favorite Thanksgiving recipe from Lorraine Otani

ingredients

  • 1 C. wild rice
  • 1 lb. sausage meat (Jimmy Dean’s)
  • 2 3-oz. Cans sliced mushrooms
  • 1 can mushroom soup
  • 1 medium onion – thinly sliced

directions

  • 1

    Cook rice until tender but not mushy. Drain.

  • 2

    Cook sausage until crumbly. Pour off fat.

  • 3

    Stir in drained mushrooms and soup. Add to rice.

  • 4

    Put layer of rice mixture in buttered casserole. Top with thinly slice onions.

  • 5

    Put in remainder of rice mixture. Cover casserole.

    Bake at 350-degrees for 60 minutes. Serves 4

    May be put together one day ahead.

    Definitely double the recipe because it’s a great leftover!
