Cold Japanese Noodle (Somen) Salad (Basic)
Add Spring Mix lettuce to this noodle salad!
1 pkg. Somen noodles, boiled (1lb)
1 kamaboko, thinly sliced
½ lb. Ham, thinly sliced
2 eggs, scrambled, fry thin layer, thinly slice
2-3 stalks green onions, thinly sliced
1 head lettuce, shredded
Lay somen, lettuce, kamaboko, ham, eggs in serving dish, garnish with green onions.
Chill in refrigerator until ready to serve. Mix sauce ingredients in a bottle, shake well, pour over salad and serve. Serves 10-12 people.
Sauce (Quick)
2 Tbl. Sesame seeds
2 Tbl. Sugar
1 tsp. Salt
¼ c. cooking oil
3 Tbl. Vinegar
2 Tb. Soy sauce
Sauce (Gourmet)
2 Tbl. Sesame seeds
1 c. Marukan seasoned vinegar
½ c. water
2 Tbl. Memmi
3 Tbl. Soy sauce
2 Tbl. Mirin
2 Tbl. Sugar
2 Tbl. Sesame oil
1 Tbl. Cooking oil
Dash of black pepper
Layer the ingredients in an open faced platter. Great Asian flavored salad.
