Cold Japanese Noodle (Somen) Salad (Basic)
Add Spring Mix lettuce to this noodle salad!
ingredients
- 1 pkg. Somen noodles, boiled (1lb)
- 1 kamaboko, thinly sliced
- 1/2 lb. Ham, thinly sliced
- 2 eggs, scrambled, fry thin layer, thinly slice
- 2-3 stalks green onions, thinly sliced
- 1 head lettuce, shredded
- Lay somen, lettuce, kamaboko, ham, eggs in serving dish, garnish with green onions.
- Chill in refrigerator until ready to serve. Mix sauce ingredients in a bottle, shake well, pour over salad and serve. Serves 10-12 people.
- Sauce (Quick)
- 2 Tbl. Sesame seeds
- 2 Tbl. Sugar
- 1 tsp. Salt
- 1/4 c. cooking oil
- 3 Tbl. Vinegar
- 2 Tb. Soy sauce
- Sauce (Gourmet)
- 2 Tbl. Sesame seeds
- 1 c. Marukan seasoned vinegar
- 1/2 c. water
- 2 Tbl. Memmi
- 3 Tbl. Soy sauce
- 2 Tbl. Mirin
- 2 Tbl. Sugar
- 2 Tbl. Sesame oil
- 1 Tbl. Cooking oil
- Dash of black pepper
directions
Layer the ingredients in an open faced platter. Great Asian flavored salad.
