Black Bean Salsa
Sherry made this on one of my trips to visit her, Nick and Drew in Indianapolis. This is delicious and healthy.
ingredients
- 1/3 cup finely chopped red bell pepper
- 1/4 cup finely chopped red onion
- 1/4 cup chopped cucumber
- 1/4 cup diced plum tomato
- 2 tablespoons chopped, seeded jalapeno pepper
- 2 tablespoons olive oil
- 1 tablespoon cilantro (leave out for Stephen)
- 2 tablespoons cider vinegar
- 1 tablespoon fresh lime juice
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1 garlic clove, minced
- 2 cans black beans, rinsed and drained
- 1 can corn, drained
directions
Combine all ingredients in a medium bowl. Stir well. Cover and chill.
