Sunshine Muffins
ingredients
- 4 cups oat bran
- 2 cups skim milk
- 1 (8-ounce) can crushed pineapple
- 1 cup unsweetened applesauce
- 1 cup honey
- 2 eggs (or equivalent eggbeaters)
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- dash of salt
- cinnamon or nutmeg to taste
- 2 cups blueberries (or other fresh or frozen fruit)
directions
Mix oat bran and milk, let stand for 10 minutes. Add the rest of the ingredients and put in greased muffin tins. Bake 25 minutes at 350 degrees.
