Sweet Potato Soufflé
We have been having this dish as a Christmas standard since the mid 80’s! It is excellent!
ingredients
- 1 29 oz. can sweet potatoes, mashed or 4-6 fresh sweet potatoes, cooked and mashed
- 1 cup sugar
- 6 Tbs butter, softened
- 1 tsp salt
- 1 tsp vanilla
- 2 eggs, beaten
- 1 cup of pecans, chopped
- 3/4 stick of butter softened
- 1/2 cup Brown Sugar
- 3/4 cup crushed Cornflakes
directions
Beat together drained and mashed potatoes, 6 Tbs butter, salt, vanilla and eggs. Place in a buttered 2 quart casserole. Make topping by mixing pecans, 3/4 stick butter,brown sugar and crushed cornflakes. Mix together and place on top of sweet potato mixture. Bake at 350° for 45 minutes.
