Chocolate Carrot Cake
¼ cup light olive oil
½ cup unsweetened applesauce
½ cup fresh squeezed orange juice
⅓ cup cocoa powder
1 cup organic Greek yogurt
2 cups carrots, finely grated
1 cup brown rice flour
½ cup oat bran
2 scoops chocolate protein powder
6 drops liquid stevia extract
1 tsp vanilla extract
2 teaspoons baking soda
¼ teaspoon sea salt
1 teaspoon cinnamon
¼ tsp nutmeg
Preheat oven to 350 degrees.
Mix the oil, applesauce, orange juice, stevia, vanilla, cocoa powder and yogurt in a blender or food processor until smooth.Add the grated carrot.
In a separate bowl, mix the dry ingredients. Combine the wet ingredients into the dry and mix just until moistened. Pour batter into a lightly greased bundt pan.
Bake for 50-55 minutes. If baking in 2 seperate 8" pans, bake until a toothpick come out clean.
