Som-Thom (Spicy Thai Papaya-peanut Salad)

ingredients

  • 1 medium green papaya (shredded)
  • 2 large carrots (shredded)
  • 1-2 cloves garlic
  • 1-2 Thai chili pepper
  • 1/2 tsp salt or 2 Tbsp fish sauce
  • 3 Tbsp sugar
  • 2-3 Tbsp lime juice
  • Optional ground dry shrimp
  • 3 Tbsp ground peanuts
  • Lettuce and String Beans
  • 4-5 cherry tomatoes - diced

directions

Grind garlic and chili pepper, add ground peanuts, fish sauce, sugar, lime juice (dry shrimp), diced tomatoes, mix well then add shredded carrots and papaya. Eat with lettuce or green beans.
