Thom Yam Kai (Coconut lemon chicken soup)
ingredients
- 1 lb Chicken
- 2 cups water
- 1 can straw mushrooms
- 2 or 3 cilantro leaves, chopped
- 2 green onions, chopped
- 1 medium onion, diced
- 1 large tomato, diced
- 1 can coconut cream
- 2 cubes tom-yam spice
- Optional lime juice, ground Thai chili peppers.

Wash chicken and cut into small pieces, about 1 inch.

Boil two cups of water then add the tom-yam cubes.

Put cut up chicken in boiling water, simmer for 5 minutes.

Add mushrooms, onion, diced tomato, coconut milk and simmer for 5 more minutes.

Remove from heat, add green onion, cilantro, lime juice, and ground Thai chili peppers to taste
