RICE PUDDING
ingredients
- 1c rice
- 4c water
- 1 tsp salt
- 2c milk
- 2c sugar
- 5 eggs (save 2 whites)
- 2 tsp vanilla
- Cinnamon (to taste)

Cook rice with water & salt over low heat. When rice is done pour in milk and stir well. Add beaten eggs, sugar, vanilla & cinnamon.

Cook a few minutes and stir well.

Pour in buttered 9x13 pan and sprinkle w/cinnamon.

Bake 30-40 minutes at 325°

Use the saved egg whites to make merengue and top baked rice pudding. Return to oven until tips of meregue are golden brown.
