Tomato and Black Bean Quinoa
Delicious side dish for BBQ chicken or beef. Also a healthy, filling option for lunch on the go (like when you are a teacher, stuck in a classroom with no break!)
ingredients
- 1 cup quinoa
- 2 teaspoons grated lime zest
- 2 tablespoons fresh lime juice
- 3 tablespoons olive oil
- 1 teaspoon sugar
- 1 (14- to 15-ounce) can black beans, rinsed and drained
- 2 medium tomatoes, diced
- 1 cup feta cheese, cubed
- 4 scallions, chopped
- 1 clove garlic, minced
- 1/4 cup chopped fresh cilantro

1. Cook quinoa according to package directions. Let cool in the fridge while putting together other ingredients.

2. Whisk together lime zest and juice, oil, sugar, salt, and pepper in a large bowl.

3. Add quinoa to dressing and toss until dressing is absorbed, then stir in remaining ingredients. Add more salt and pepper to taste.
